Seasonal, local, and sustainable. They’re not just buzzwords, but a healthy and environmentally friendly way of cooking and eating. In this Boot Camp, you’ll learn to recognize when produce is at its peak and how to best use freshly picked, locally sourced ingredients. On the first day, you’ll experience local agriculture—including taking a trip to the CIA farm—while gathering fresh produce with the helpful guidance of your CIA chef-instructor. On day two, you’ll prepare your ingredients and learn the techniques that will make the most of them as you express your creativity and get a taste of the farm-to-table lifestyle.
