This class explores the seafood varieties that support a healthier, more sustainable lifestyle, such as salmon, scallops, mussels, crab, monkfish, and cod. Our seafood methods will incorporate both dry- and moist-heat cooking methods as appropriate to create dishes that are flavorful, memorable, and based on global traditions. You will explore preparations that come from Spain, France, and China, including serious traditional preparations of the accompaniments that make these cuisines delicious.
This exciting new class expands on the competencies covered in our signature Culinary Boot Camp - Basic Training, and is for serious food enthusiasts and culinary professionals alike. The class focuses closely on specific dishes and ingredients, and the cooking methods attached to them. We suggest students interested in the Cooking Techniques Series complete Basic Training first. Then, the Cooking Techniques Series classes may be taken in any order.
As a Boot Camp participant, you’ll receive a chef’s uniform with a jacket, pants, and a neckerchief. Paper chef’s hats and aprons will be provided in class.
