Tasting Terroir

Skill Level: Intermediate


In this examination of terroir, you will study the critical viticultural influences that ultimately impact the aroma, flavor, body, and style of any given wine. You'll examine not only geology and soil, but also temperature highs and lows, duration of sunlight hours, orientation to the sun, elevation, rainfall, wind velocity, frequency of fog, and many more issues. In addition, you will explore key viticultural techniques to understand how certain practices affect wine flavor. You will also consider the harvest, learning how to determine what constitutes perfect ripeness.

Through lectures, field trips, discussions, and tastings, during Tasting Terroir you will also:
  • Understand the concept of terroir more thoroughly, while studying the vast range of environmental influences that ultimately impact wine.

  • Learn to "think like a viticulturist," by systematically exploring the factors that make up a site and anticipating their effect on wine flavor, style, and quality.

  • Benefit from in-depth discussions and visits with viticulturists.

  • Participate in exclusive comparative tastings of experimental wines that illustrate various viticultural techniques.
