In this class, produce rules! Through discussions, product identification, tasting, and hands-on production, you will learn to prepare a range of dishes where vegetables are at the center of the plate. You’ll create delicious classical and contemporary vegetarian preparations that ensure a healthier meal—without sacrificing flavor. And you will also discover a variety of lesser-known vegetables that will take you beyond your comfort zone into the innovative world of meatless cookery. The highlight of the class is a collaborative meal you will prepare with fellow students.

As a participant in this class, you will receive a CIA logo apron and a copy of an award-winning CIA cookbook to take home.
