Destination: Culinary Boot Camp – The Finger Lakes, NY


Here's your chance to experience the CIA's popular culinary immersion – Basic Training Boot Camp – in a brand new setting. Join us this October in the Finger Lakes region for this exclusive culinary program hosted at the well-appointed New York Wine & Culinary Center.

During this exciting five-day course, you will become well-versed in the CIA fundamentals of cooking. Through hands-on cooking and chef demonstrations, you will learn knife skills, kitchen terminology, dry-heat cooking methods (roasting, grilling, sautéing, pan-frying, and stir-frying), and moist-heat cooking methods (braising, shallow poaching, deep poaching, and steaming). You will also enjoy food and wine pairings as you savor tastings of NY State, American, French, and Italian wines.

As a Basic Training participant, you'll receive two chef's uniforms, each with a jacket, pants, and a neckerchief. Paper chef's hats, side towels, and aprons will be provided in class.
