The "Best of" Boot Camp (Five-Day Program)


The "Best of" Boot Camp at The Culinary Institute of America is an intensive five day, hands-on, fantasy culinary vacation!

This program features all the best that CIA Boot Camp programs have to offer. Each day will highlight the fundamentals of cooking and baking while introducing you to new and exciting tastes. It is the perfect opportunity for serious foodies to get an inside look into the hallowed halls of The Culinary Institute of America and work with our esteemed chefs who will share step-by-step demonstrations and instruction.

Here is a sample of the class schedule:

Day One: Sharpening Your Knife Skills and Culinary Fundamentals
Become well versed in the fundamentals of cooking. Assignments will include hands-on training in knife skills, kitchen terminology, dry-heat cooking methods (roasting, grilling, and sautéing,) and moist-heat methods (braising, poaching, and steaming).

Day Two: The Italian Table
Unleash your passion for food and your zest for life. Each team will explore the different regions of the country, improving your knowledge of Italian geography while learning about the flavors profiles that distinguish Italian cuisines. You’ll expand your Italian and culinary vocabulary as you taste indigenous ingredients and prepare regional specialties.

Day Three: Flavors of Asia
The history, cultures, and regions of the eastern world come together in this gastronomic tour of Asia, home of the world’s most diverse and flavorful cuisines. You’ll embark on a fascinating culinary journey blending traditional and contemporary aspects of Asian Cooking. Each team will prepare dishes from a different country in Asia: China, Japan, Thailand, Vietnam and Korea.

Day Four: Baking and Pastry
Let your artistic talent and passion for baking and pastry arts come together. You will learn the techniques and fundamentals of basic bread baking and how to create simple yet elegant plated desserts.

Day Five: Bistros and Brasseries
Featuring the best of casual American-style and French bistro cooking, you will learn what it takes to prepare this irresistible food with ease. You'll discover traditional and innovative recipes to add to your repertoire, along with fundamental techniques common to bistro cuisines from roasting to braising to baking. This is the perfect class to wrap up a fabulous week!
