Food Enthusiast Catalog - The Culinary Institute of America

Street Foods of the Middle East

Shrouded in mystery and steeped in tradition, the cuisine of the Middle East is ready for its debut. In this unique class, we will create such favorites as falafel – the king of street foods, shawarma (made from chicken or lamb), ful (prepared from fava beans), and pastries served open-faced or filled with chili, spinach, meats, cheese, and olives. Sweets could include mad'lu, made from sweet cheese curds on rich biscuit dough, drenched in syrup. Each small plate will host exciting ingredients and palate-pleasing flavors.
